Last Thursday, we made dinner (almost) from scratch. The following photos represented the various shots I took while W prepared the Thanksgiving Dinner. The photos will tell the whole story….First, we began with the pumpkin pie. We found this precious can of pumpkin mix at the FOURTH grocery store, the first three places were all sold out!
Then, the pie dough was prepared and prepped onto the pie pan, and then baked….
Pumpkin Pie - The ingredients for the pie mix, all added into the mixing bowl, stirred until the texture and color were even…
The stirred mixture will be poured into the crust, and then baked for 50 minutes…
Cranberry sauce - Wash the fresh cranberries, and then boil in water, adding a cup of orange juice and sugar. Stir and heat until pasty.
Mashed Potatoes - boil the chopped potatoes until soft, then add butter and milk. Mash the potatoes until the texture is smooth….
We have fresh Brussels sprout, and they are still buds on the stalk…
After washing, boil the sprouts for a few minutes. Also, saute the Pancetta…
Mix the sprouts with the Pancetta, cook for a couple of minutes and then add chicken broth…
Ingredients for turkey stuffing…
Saute the chopped celery and onions….
And then, mix them with croutons. Add mix with chicken stock and walnuts until the croutons are soft but not soggy. Then bake for 60 minutes at 425F…
We cooked Cornish hens instead of a turkey. Stuff the little hens with the stuffing mix, and then tied up with strings. Bake in the oven for 60 minutes at 425F….
Dinner is ready on the table….
Usually, I would pair the meal with a white varietal, but really want to finish this bottle of Chateau St. Jean because it had been in storage for almost ten years. The pumpkin has a good texture and goes well with the vanilla ice cream….
The entire course took almost seven hours to prepare, excluding numerous trips to the grocery stores. The total cost was reasonable at approximately US$90, considering how much leftovers we had. The Brussels sprouts only cost us $3 even with such an enormous package! It was a delicious meal after all and we’d not hesitate to do it again (with a larger bird) on the next festival!

Fantastic looking meal. I hope one of these days, W and I have a chance to cook together. Maybe you guys should come over for Thanksgiving next year! Brussels sprouts on a stick – how convenient! =D Good choice on the Cornish game hens. I like the individual sized portions and they cook more easily than a whole turkey. Happy Thanksgiving!

Happy Thanksgiving! It’ll be fun to cook a meal together and we can observe Chris baking something yummy! The cornish hens are W’s idea, we had been planning on roasting a rack of lamb.

Cornish hens are more tender in texture, found them easier to cook through. Oh, how’s your pumpkin pie? Our crust needs to be perfected next time around!

Thenk you, Jason! I’m glad you like the cornish hens too! They’re more easier to cook through and took less time than a big turkey. The pie crust was made from scratch. Since we have only one stove, the pie was baked one day before Thanksgiving Day.

nice. I gotta try making the brussel sprouts like this. The cornish hens looked bigger initially, lol. Perhaps I should buy a post thanksgiving turkey so that I can eventually have bones to make turkey stock for a soup.
That looks really impressive, and the pictures were nice and easy to follow. You must really love cooking to have went to those lengths, it really did pay off.
I am so impressed Gary. I would any day have Cornish hen than turkey. The meal looks just great. You guys would do your mothers proud. I am glad you like Brussel sprouts. I like them too.

Yeah, those hens shrank in size once they were done baking, and very juicy and delicious! Got them from Ralph’s. Last night, I just found out the turkey stuffings are almost 50% off from the pre-Thanksgiving price. LOL

Thank you, I’m glad you like them! I tried to categorize and shoot each kind of food while W was doing the cooking. The whole meal was prepared in two different kitchens, as you can see there are two different stoves.
Gary – wow… that was just for the 2 of you? Do you and W work well in the kitchen together? Sometimes people seem to have different working styles.
By the way, your stove looks spotless (mine is well… not spotless).

I think my pie came out perfectly, but the crust itself was very, very boring. I used a Pillsbury pre-made crust, and it was super bland.

Oh wow that is a lot of delicious food. Anyhow, I had the same experience looking for pumpkin mix. The lady at the grocery store told me that there was apparently a national shortage of them at the moment.

Haha~Doris, even I couldn’t believe we made all these! There are still a whole load of stuffing leftovers in the fridge. W wants to make everything from scratch, so, no Stovetop nor powdered mash potatoes from the box!
